The weekend before this dinner, we had a lovely trip to Prince Edward County. We had a nice relaxing time, and were honoured to stay with our new friends Judith and Xander. If you are looking for a great place to stay in the area her cottages are amazing. While we were there, we picked up a few locally grown items, so we could feature them. OH and of course we picked up a little bit of wine too…. maybe more than a little….
Our trio gathered at Steph’s for a debrief and were met with a glass of PEC wine, to keep us motivated. Shawn was inspired by some golden beets that we had picked up and came up with his own version of Golden beet salad with goat cheese and pistachio vinaigrette.
We opened a 2013 Huff estates Gamay, to sip on. This appetizer was not only visually appealing, but absolutely delicious. Fresh, tender beets, fresh beet tops, from Steph’s garden, creamy goat cheese and a light nutty dressing. We do love summer.
For our main, we had a lovely grilled arctic char with ricotta gnocchi, fava beans and peas.
The fish was seasoned with our own Mediterranean spice rub, and grilled over charcoal, the fresh local veggies added a nice burst of freshness to the dish, and of course Shawn’s now famous ricotta… We paired this with a Casa Dea 2014 Chardonnay.
For dessert, we decided to go for simple and local. We served Assorted berries with zabaglione.
Creamy caramel, with fresh berries, crumbled amaretti cookies and lady fingers. It was a nice light finish to the meal. We sat in the yard until dark, chatting about our time away and new adventures ahead…. And a certain big yellow house…. This may turn out to be an exciting time for our trio.
The layered golden beet tower appetizer is a triumph of taste, shape, and engineering – obviously you two returned from PEC inspired and creative. Onward!
