All Hail Chicken Supremes

After last week’s shopping error, we got our chicken supremes this week!!  For some reason cold weather, to us means Indian food.  I think it’s mostly because of the Indian stews we love so much. Our apartment is a little…. well packed with Black and White Gala décor, so we stuck to guests, who would understand.  This week we have our trio and our good friend Jennifer ( with the mighty Enzo, who has been reviewing tonight’s music).

We started with our Gingery Cauliflower Soup. This is a wonderful cold weather soup, creamy, but with the flavor of Indian spices.

Our main featured the chicken supremes in Silken Chicken. This is an old favorite of ours.  The chicken is marinated in crème flavoured with Garam Masala, roasted cumin, and other spices.  Just before cooking you sprinkle more of the same spices directly on the chicken to make a sort of spice crust. It is then cooked quickly at 500°.  The spices actually mellow while cooking and the chicken takes on a silky texture.  We served this with Basmati rice, Creamy peas, Bangan Achari (Eggplant in pickling style), and Naan. The best part is that there are leftovers for lunches and it will taste even better the next day.

For dessert, we wanted something light, but comforting.  Shawn found an Indian rice pudding.  For this dish you run the rice through the spice mill, to make a creamier texture.  Milk is steeped with Cardamom pods and the rice is added along with almonds and topped with pistachios.  The creamy rice, the crunch from the nuts and the aroma of cardamom make this a lovely end to the meal. We did forgo Chai for our regular Tranquil Dream Tea.

Since most of the prep was done on Sunday, we had a bit of a relaxed pace through dinner, with time to catch up and discuss our week, Perry’s Judith, Black and White Gala business and other events.  We were having such a nice chat, that we almost forgot that we have rehearsal.  There was a moment, when we looked out into the cold snowy night and thought how nice it would be to stay in the warmth, open another bottle of wine and gather round the piano…. But alas we can’t get near it, with the pile of décor items piled up. So off we go, into the cold, knowing that there is warmth waiting for us, in the form of friends and fellow singers, eager to work through Parry’s intricate intervals and 6 part men’s choruses. This concert is going to be something special…..
